- 50ml Rock Rose Gin Spring Edition
- 25ml Lemon juice
- 25ml Elderflower cordial
- 25ml Sugar syrup
- 50ml Tinned, frozen or fresh gooseberries, cooked with a little sugar, blended to a puree and sieved
- 1 egg white
- Garnish: Shortbread biscuits
Rock Rose Gin Spring Edition
- Put all ingredients except the shortbread into a cocktail shaker with ice and shake well
- Fine strain into a coupe glass and garnish with crumbled shortbread
You can serve shortbread biscuits on the side.
